INGREDIENTS

Avocado

Grapefruit

Salt

Pepper

Agave


PROCEDURES

Supreme cut the grapefruit and then into large chunks (save juice). Use equal amount of Avocado and cut into the same size. Lightly salt the avocado pieces. Slice mint. Very gently mix the Avocado, Grapefruit and mint so as not to mangle it all and to preserve the look. Mix the saved grapefruit juice with a little agave - just enough to knock down the bite, or a lot if you like it sweet. Pour this mixture over the Avo, Grapefruit and Mint mix. Top with pepper.


NOTES

Be very gentle when mixing ingredients if you want to preserve the look. Salting the avocado directly will make a big difference. Make the juice / agave mix to your taste-preference. Keep the chunks of avocado and grapefruit on the larger size; this really helps to keep the integrity of the flavors and will also give a good foundation for the dressing (juice / agave) to act on.
